Pineapple Shrimp Summer Stir Fry



This is a wonderful stir fry that I invented a couple nights ago and it is amazing! You can eat it over rice or all by itself.

Ingredients:
  • 12 - 16 oz Medium Shrimp (Detailed and Deveined)
  • 1 Fresh Pineapple (Cored, Peeled, and Cubed)
  • 3 Colored Bell Peppers (Cut Into Chunks)
  • 1/4 Of A Sweet Onion (Also Cut Into Chunks)
  • 3 Tbs Olive Oil
  • 3 Tbs Lime Juice
  • 2 Tbs Fresh Cilantro (Chopped)
  • 2 Cloves Minced Garlic
  • Black Pepper
Directions:
  1. Put the oil, garlic, peppers, and onions in a large sauce pan or wok over medium heat. Add pepper to taste.
  2. While peppers and onions are cooking, combine the pineapple, shrimp, lime juice and cilantro in a medium size bowl.
  3. Cook the peppers and onions for about ten minutes until they are starting to get soft.
  4. Add the pineapple shrimp mixture for about another ten minutes until the shrimp are mostly opaque.
  5. You can use the bowl that you mixed the shrimp in as a serving bowl.
